Quick Pickled Red Radishes

Ingredients:
Cherry belle radishes, sliced
Onions, sliced
Garlic cloves, mashed and peels removed
Sea salt
Sugar to taste
1 part rice vinegar to 2 parts boiling water
Instructions:
1. In a bowl, combine salt, radishes, onions and garlic. Mix well. Set aside 30 minutes. Drain out liquids.
2. Pour boiling water over the mixture. Let sit for 2 minutes. Drain.
3. Add mixture to sanitized mason jars. Add mixture of water and vinegar to submerge. Add sugar to taste. Store in the fridge for at least 24 hours before eating. Keep up to two months.
