Canh Xúp Lơ:  Potato Cabbage Cauliflower Soup

Ingredients: 


For soup: 

1/2 white onion, sliced

2 garlic cloves, minced

2 Yukon gold potatoes, cubed

4-5 crimini mushrooms, sliced

2 carrots, cubed

1/2 cauliflower, cut small

1/2 cabbage, cut small

Mushroom seasoning granules, to taste


Toppings: 

1 bunch cilantro, chopped

1 bunch green onions, chopped

Black pepper


Instructions: 


1. Heat oil on medium high heat. Add onions and garlic. Cook for 3 minutes.


2. Add all mushrooms, carrots, potatoes, cauliflower, and mushroom seasoning granules. Cook for 5 minutes


3. Add water and bring to a boil. Lower heat and simmer for 20 minutes.


4. Add cabbage and cook for another 5 minutes.


5. Garnish with black peppers, green onions, and cilantro.
