Canh Bí Đỏ:  Butternut Squash Soup

Ingredients: 


1 Butternut squash, cubed. You can also use a small pie pumpkin.

Onions and garlic, minced

Mushrooms, sliced

Mushroom seasoning granules


Toppings

Cilantro, chopped

Green onions, chopped



Instructions: 


1. Heat oil on medium heat. Add onions and garlic and cook for 2 minutes. 


2. Add mushrooms and cook for 3 minutes.


3. Add squash and mushroom seasoning granules and cook for 3 minutes.


4. Add water. Bring to a boil. Cover and simmer for 20 minutes.


5. Turn off heat and add cilantro and green onions.


6. Serve with rice.
