Canh Bầu: Opo Squash Soup

Ingredients: 


For soup: 

1 Opo squash or tromboncino squash, cut into even sized pieces. You can also use zucchini.

1 pint mushrooms, sliced

Onions and garlic, minced

Mushroom seasoning granules

Green onions, chopped

Cilantro, chopped


For side dishes: 

Just Egg or beaten eggs

Green onions, chopped

Soy sauce and Thai chili peppers for dipping


Instructions: 


1. Heat oil on medium heat. Add onions and garlic. Cook for 2 minutes.


2. Add mushrooms, squash, mushroom seasoning granules.  Cook for 5 minutes.


3. Add water. Bring to a boil. Cover and simmer for 20 minutes.


4. Turn off heat and add cilantro and green onions.


5. On a fry pan, heat oil on high heat. Add Just Egg or beaten eggs and chopped 

green onions. Fry until done. Remove from the pan and cut into strips.


6. In a dipping bowl, combine soy sauce and chopped Thai chili peppers.


7. Serve with rice.
