Cóc Ngâm: Soaked June Plums
Ingredients:
Approx. 8 pounds of June plums (aka Jocotes) or baby green mangoes
Approx. 1/2 tablespoon of sea salt
Approx. 1 cup of sugar
Approx. 1.5 tablespoon red peper powder (gochugaru)
4-5 Thai chili peppers, minced
Instructions:
Peel and cut the fruits into even pieces.
Rub the salt all over the fruits. Cover with a kitchen towel and let sit for 30 minutes at room temperature.
Add the sugar, Thai chili, and red pepper powder. Mix well.
Store in a glass jar in the fridge for 24 hours before serving. This will stay good in the fridge for 2-3 weeks.
