Đậu Hũ Nước Đường Gừng: Sweet Silken Tofu Pudding in Ginger, Orange, and Cinnamon Sauce
Ingredients:
Approx. 1 oz of fresh ginger or to taste
Approx. zest of 1 orange or to taste
Approx. 1 cup of sugar or to taste
2 cinnamon sticks or to taste
Juice of 1 orange
3 cups water
1 package of soft silken tofu
Optional: pinch of ground cinnamon for garnish
Optional: orange slices for garnish
Instructions:
Peel the ginger with a spoon
Use a cheese grater to grate the ginger and orange zest finely.
In a saucepan, add the ginger, orange zest, cinnamon sticks and sugar. Cook on low heat, stirring frequently, until the sugar is lightly caramelized.
Add the water and orange juice to the saucepan and cook on medium heat until the syrup reaches desired consitency (about 15 minutes).
Use a spoon to slice the tofu into thin layers and spoon into a serving ramekin. Microwave for 1 minute and drain out the excess water.
Spoon the hot syrup over the tofu. Serve warm.
